Regional Flavors of Italy

{ A storytelling dinner series: creating a cultural connection by threading antique tradition with local artisans }

Experience the ingredients, varietals, traditions, and historical flavors of particular regions of Italy. This multi sensory dinner series will provide edible, verbal, and visual storytelling of the old world-highlighting Tuscany, Veneto, and Sicily. Each dinner will focus on regional Italian wines and recipes of a specific Italian region with locally sourced ingredients here in the Pacific Northwest. This opportunity will also connect you with Slow Food, to share the values of local and global aspects of food sourcing and supporting the artisanal growers and producers in our region.

Food by Chef Jason French of Nedd Ludd and hosted by Astrid Ensign of Taste of Italy – will to bring the magic of Italy to the table in true Slow Food fashion with our regional ingredients by creating meaningful cultural connections via culinary experiences.

There is more to the region of Veneto than the famous gondoliers in the canals of Venice. Located in northeastern portion of the boot, this region connects the Adriatic to Austria is home to one of the most unique and diverse palates of Italy. Rich heritage merges with humble ingredients in Veneto-land of rice producing deltas, vineyards, agricultural flatlands, and one of the most dramatic mountainscapes. Known for its Prosecco, Bardolino, Soave, and Valpolicella- wines of Veneto pair perfectly with the regional traditional dishes of radicchio, gnocchi, risotto, beans, and polenta.  The Veneto region is full of contrast: venison carpaccio from the mighty Dolomiti Mountains to the enchanting canals of Venice, sea scallops with goose prosciutto to black squid ink risotto of the Adriatic Sea and frittata with hops from Lake Garda.

Due to multiple centuries as a significant crossroads, the cuisine from the southernmost island of Italy includes an impressive diversity. The spices and flavor combinations are a result of Greek, Roman, Moor, Byzantine, Islamic, Norman, Catalan, and Spaniard civilizations. From the pistachios grown in the volcanic rich soils of Etna, to the salt flats of the western coast, the endless bounty ranges from the mountains to the sea, contrasted by olive trees as old as the Greek temples, with date palms growing between Moorish minarets and Baroque cathedrals. Sicily’s unique wines of indigenous grapes, such as Nero d’Avola, Carricante, Nerello mascalese, and Nerello cappuccio, have grown on the volcanic slopes of Mount Etna since the 5th century BC. Such specialties as chickpea fritters, lemon granita, sword fish with mint, anise biscuits, mozzarella filled arancini, sesame seed studded breads, bitter almond stuffed sweets, and spaghetti with sea urchins, showcase the array of flavors in the Sicilian kitchen.

PASTA MAKING CLASS

A hands-on fresh pasta lesson, learn how to make spaghetti, fettuccine, papardelle, and ravioli from scratch, wine pairings and recipes provided. Take home spinach ricotta ravioli and wild boar ragu to bring home to your friends and family. No age limit, so bring the whole family!

PORCHETTA HAPPY HOUR

For day two of our La Tavolata fest, we’re hosting an Italian Happy Hour, highlighting a traditional Italian dish: Porchetta! Porchetta encapsulates all that’s good in the world, slow roasted pork that’s been heavily salted, stuffed with garlic, rosemary, fennel and other herbs.

Come hungry and thirsty; there will be loads of mini porchetta sandwhiches, Italian olives and cheeses, and Italian chocolates to snack on. We’ll also have a host of our favorite Italian wines and a special tasting by Calisaya, makers of Oregon’s finest Italian-style amaro.
